卡拉胶又名角叉菜胶、鹿角藻胶，是从红藻中提取的一种高分子亲水性多糖，具有极高的经济价值，是世界三大海藻胶工业产品（琼胶、卡拉胶、褐藻胶)之一。卡拉胶为食品添加剂，而食品级的卡拉胶为白色至淡黄褐色、表面皱缩、微有光泽的半透明片状体或粉末状物，无臭无味，口感粘滑。卡拉胶形成的凝胶是热可逆性的，即加热融化成溶液，溶液放冷时，又形成凝胶。卡拉胶因具有良好的保水性、增稠性、乳化性、胶凝性和安全无毒等特点而广泛应用于食品工业中。
